Beets

Beets should be a staple in more people’s diets. They are cheap, high in fiber and a rich source of both Vitamin A and Vitamin C. Beets grow very well in cool weather.

If you are planting them in late July, then you will need to make sure that you dig deep holes so that the roots stay cool. You will also want to prune the plant regularly to keep the leaves from getting too long, because the vegetable will get tough.

Spinach and Kale

Spinach and kale are also vegetables that more people should consider adding to their diet. They are rich sources of calcium, vitamin A, vitamin C and vitamin K. These are also great vegetables to grow in the fall. They tend to grow well in most regions up until the early winter.

Carrots

Carrots are great cool weather vegetables to grow in the fall. They have plenty of vitamin A, fiber and magnesium.

The best time to start growing carrots is about three weeks before the last expected frost of the year. You can plant new carrots every couple of weeks afterwards. They typically take between two and three months to mature. You will need to monitor them carefully and harvest them when they are ready. This will allow you to plant a new batch right away to maximize the amount that you produce.

Cabbage

Cabbage is another great fall weather crop that you may want to grow. It is a great vegetable to grow in the fall as long as you have rich soil, plenty of water and good fertilizer. You should consider planting a couple of different varieties in different months to get the best output.

Fall cabbage should be planted between 6 and 8 weeks before the first frost. Your crops will take about two to four weeks to harvest, but a light frost probably won’t kill the hardier varieties. You may want to plant frost cabbage if you live in a particularly cold region, because it is the most frost resistant variety.
